  1. My grandmother sailed here to USA from Itri, Italy. She had a recipe for celery leaves. She battered them and then made a liquid she called Scarpetch. I really don’t know how to spell it. Just spelling the way I remember her calling it. Have you heard of it and/or have the recipe for it?

    1. Hi…what was your grandmothers(bisnonna) maiden name? I was born in Itri and presently own a summer home there. My mom would make the fryed celery and its leaves during xmas holiday. I dont know exactly how its made. If I recall you boil the celery till tender( should be cut length into strips), cool and then squeeze out the water from them. they should be stringy and dry. season flour and fry. Hope this helps. Its an old time receipe. My maiden name is Manzi.
