    We are working on a cookbook of our family recipes. Unfortunately, we have lost the original recipe for a pastry we call viscotina or viscatina – we are not even sure of the spelling. The best I can describe it – quite a hard consistency, shaped into small round balls or twisted lengths and covered with a hard icing. Everyone loved to dunk them into morning coffee. If you could give us the correct Calabrese name and spelling = assuming you recognize this pastry and any recipe that is traditional for the area, we would really appreciate it!

    Caciocavallo Silano is the name of the cheese that my Italian cousin gave to me to bring home when I visited their home last fall. She did not speak English and I can not speak Italian. What kind of cheese is it and what is it used for please. It is a hard cheese and I grated it for pasta.
