“Spaghetti alla Amatriciana” is another famous recipe from Lazio, it takes its name from the town Amatrice near Rome. Did you know that the Amatriciana was originally “in bianco”, without tomatoes? Only at the end of the XVIII century tomatoes were added to this dish.
